Easy replacements for picky eaters/allergies
Gluten-free pasta fits right in, but it gets soggy really fast. I usually start tasting it around 2 to 3 minutes in to catch it al dente, before the package time.
For dairy-free creaminess, olive oil plus pasta water, or a spoon of cashew cream, is a pretty good replacement. Coconut milk can work in small amounts, especially in tomato sauce. Keep it subtle so it doesn’t taste like dessert.
For vegetarians who need protein, there are the options of chickpeas, white beans, and eggs, which are my weeknight MVPs. If your kids hate “spicy,” I keep sauces mild and put red pepper flakes on the table for the adults. Everyone wins, nobody complains (as much).
